The finer your flour the better/lighter your bread will turn out. Wheat flour looses its nutritional value quickly, so do not store wheat flour like white flour. Grind only what you need at that time – or grind and freeze flour for a few months at a time. Gluten in wheat is the elastic part of dough, working with the yeast causing it to rise.

This works great for making your own cereals, or add 1 cup to 1 lb of ground meat to extend it (taco meat or meat loaf). You could also use a coffee grinder for cracked wheat if necessary.

Introduce wheat slowly to your family and only substitute small amounts at a time. It takes longer for wheat flour to absorb moisture – I have learned that once my yeast is dissolved in the warm water, I then add the amount of wheat flour I want in the recipe, mix well, then cover and let it sit about 10 minutes before I add any other flour. Also, whole wheat bread dough will be slightly sticky – once again because it takes longer for wheat to absorb the moisture. Don’t add to much flour or it will turn out to dry and crumbly. Knead your breads atleast 8-10 minutes for a softer lighter bread.
